Because the system is modular, you design the system that fits the table you plan to use for the group filleting. Above is the station used by the Fond du Lac Chapter of Fishing Has No Boundries. (Fond du Lac, Wisconsin)
Designed for eight filleters it consists of 2 Family Packs joined together at one end of the table, one family pack for the middle of the table in its horizontal configuration, and 2 single boards at the end. (14 total boards, two carving deck and one clamp deck---joiners and carry bags included)
Electric knife users work on one end using the single boards. Each is also equipped with carving decks for rib removal after initial cut. A clamp deck is also used on the station when a catfish or bullhead requires cleaning. (It can be locked onto any board in the system.)
The single family pack is in the center of the table where two filleters work across from each other. They either fillet each fish individually, or do the rib removal and skinning from the electric knife users after they make the initial filleting cut.
The double family pack is joined together for a dumping station when a bucket is emptied onto the table. They are then within reach of the center filleters, or the area is used by two more filleters at the table and two more at the end.
Free table area in the middle is used for holding sharpeners and knives.
Using this configuration maximum efficiency is achieved and fastest fillet times enjoyed.
Master Filleter Tom Willet of Fond du Lac using electric knife reaches for another fish. This day a third electric knife user joined the end group removing the one board from the center configuration to use and a large dumpster was wheeled into the center position for fish waste.
